KETAM GORENG ALA NEO-DAPUR NYONYA STYLE

Alhamdulilah i managed to prepare this controversy recipe using my own 'hentam aje' ingredients. Really hope it will help others who keen to know the recipe as well. For your info, this recipe actually appeared to public thru TV3 slot 'Dapur Nyonya' if i not mistaken every Thursday morning host by Chef Florence Tan & Charmaine as her assistant chef. Me myself really keen to know the recipes as the slot doesn't give details in written and the show also very fast & that the reason why many of the audiences can't copy the recipes. The worst still, even in their fan page also no details provided for the recipes (many liker keep ask the recipe & even some of them personally write an email to TV3 but until today there is no reply from them). I wonder why this thing could happen since u publish the recipes online but seem u don't want to share the secret recipes by end of the day. I really frustrated to wait for the recipes especially by Chef Florence herself because this is her own recipe that she claimed was prepare to her late mother in law. At 1st i just want to ignore this recipe but honestly my mind keep rewind me to that tempting crab with the combine aroma of Asian taste (i guess). That's the strong reason why i personally want to experiment with my own ingredients that i based also to the picture in their 'Dapur Nyonya' fan page. I hope Chef Florence or other people who know the genuine recipe could share it with me later on. For the moment just stick to this tempting recipe & i believe u gal sure agree with me this time. Must try to believe ;)
Btw for the recipe i choose to jot it down in BM so it easier for the readers to read. After all, u can use the translator to suite ur need.Tq

Bahan2:

  • 5 ekor ketam (boleh potong dua/seekor)
  • 1/2 cawan udang kering (tumbuk hancur)
  • 2 sudu besar serbuk kari ikan/seafood (campur sedikit air menjadi pes)
  • 3 ulas bawang putih (tumbuk hancur)
  • 2 sudu besar taucu
  • 2 sudu besar kicap masin/sotong
  • 2 batang serai (diketuk)
  • 2 tangkai daun kari
  • Sedikit gula
  • Sedikit air
  • Minyak utntuk menumis
Cara menyediakan:
  1. Mula-mula, goreng ketam dalam minyak yg betul2 panas sehingga ketam berubah warna. Angkat dan toskan.
  2. Tumis bawang putih sehingga garing dan masukkan pes kari.
  3. Goreng sehingga garing, kemudian masukkan taucu dan udang kering. Kacau sebentar (jika terlalu kering, masukkan sedikit air).
  4. Masukkan juga serai dan daun kari beserta kicap masin & gula.
  5. Apabila tumisan mendidih, campurkan ketam yg telah digoreng tadi dan gaul sebati.
  6. Sedia untuk dihidang. Selamat mencuba!
